Fajita Recipe


This recipe makes 15 fajitas.

2 1/2 cups cooked black beans
2 cups cooked rice
2 medium tomatoes, diced
1 1/2 lbs. ground turkey
1 small red onion, diced
1 tsp. onion powder
1 tsp. cumin
1 tsp. ginger
salt and pepper to taste
15 tortilla shells (this recipe is easy and delicious)

Brown your turkey and onion in skillet. Cook black beans. Cook rice. Mix rice, black beans, cumin, onion powder, ginger, tomatoes, salt and pepper in large bowl. Stir. Scoop out a heaping spoon full of ground turkey onto your tortilla shell, scoop a heaping spoon full of rice mixture on top of turkey. Add some mozzarella cheese. Fold in the sides, top, and bottom. (I wrap mine in aluminum foil and freeze until ready to eat. ) Warm in oven and enjoy!

Freezer Cooking Day

It's been a few months since I did a freezer cooking day. Summer is a very busy time and I still had some food left over. With school started in a few weeks I decided I should do another freezer cooking day.

On my list of things to make are:

Stuffed Shells
Fajitas
French Toast Sticks
Bread Machine Cinnamon Rolls
Meatloaf
Stuffed Green Peppers
Banana Bread Muffins
Taco Burritos
Homemade Coconut Oil Flour Tortillas

I made up my own recipe for the Fajitas, they turned out very yummy!!

HELP!!! How do you kill bamboo?






Have you ever thought about planting bamboo? Don't




I have always liked the looks of bamboo so a couple of summers ago I planted two stalks. One died and one lived. It did not grow very fast the first two years, then all of the sudden I had a thick wall of bamboo. It did it's job of blocking the view of the road from my pool. I still enjoyed looking at the bamboo.




One day my brother-in law tells me about a picture he seen of bamboo growing through concrete. I had nightmares that night about my bamboo coming throw my floors. I had decided that the bamboo had to go. We cut it down, but the roots go forever, so it seems. There are new shoots coming up daily. I have poured root killer on it, bleach and have tried digging out the roots. It's almost impossible.
All of the research I have done says to get a back hoe and dig it up or burn it. My porch is right beside of the bamboo and so is my gas tank, so fire is out of the question. If anyone has an suggestions, I'm willing to try anything.

Shopping at the Local Farmer's Market





Shopping at your local farmer's market can save you money and help out your local farmer's.

I am very lucky that I live in an area that has two farmer's markets close by. One on Tuesdays and one on Wednesdays. No excuse for not having fresh fruit and vegetables.

Here are some things I bought at yesterdays market.

Green/Red peppers: 3 for $1.00
Local raw honey: $7.00



2.5 lbs of fresh green beans: $3.00

I can't think of anything more tasty than a fresh pot of green beans. Add some bacon and butter and can we say Yummy!!!

Homemade Apple Sauce





Apples, Apples, Apples. Everywhere I turn there are Apples.



We just got back from my grandma's house where we picked about two bushels of apples. Which is approximately 80 lbs. of apples. Her tree was loaded. I'm not sure what kind of apple they are, but they make some great apple sauce. I would compare them to a granny smith, green and sour.

Here is my homemade apple sauce recipe. My daughter just likes it with sugar but you can add cinnamon, honey what ever your pallet enjoys.

20 medium apples, peeled and cored
1 cup of water
1 1/2 cups of sugar



Peel your apples, core them and cut into fourths. Place them in a large bowl of salt water ( so they don't turn brown.) After all your apples are in the salt water rinse the salt off and place them on top of stove with one cup of water. Cook on medium heat stirring occasionally so they don't burn. Cook for approx. 30 mins. Once the apples are soft and mushy bled them with electric mixer until all apple chunks are fine. (If you like chunky apple sauce, leave the mixer part out.) Stir in 1 1/2 cups of sugar until dissolved. Pour into jars of bags and enjoy. This recipe makes 7 snack size bags. They are great to freeze and enjoy when ready.

Reusing water bottles


Reusing my plastic water bottles is one of the ways I'm helping my environment and my wallet. The U.S. is the world's largest bottled water consumers. I use my tap water to fill my plastic bottles. If your tap water isn't very tasty try the Brita filter pitchers. They are around $9- $15.

I keep 10 -15 water bottles filled at a time in my refrigerator crisper drawer. Then when anyone wants a bottle of water, they are cold and ready to enjoy. I wash them out after each use, just as if I were washing a cup. Then refill and back in the refrigerator.

Refilling water bottles with your own tap water saves you money also. The average price for a 16.9 oz. water bottle is anywhere from $0.15 - $1.69 a bottle. The average price of tap water is $1.50 for 1,000 gallons-less than a penny a gallon. A big savings. $$$$ I will buy a 20 pack of water bottles for $3.00 and reuse. When it's time for them to be disposed of they go into the recycling bins.

Another method is to buy reusable water bottles. You can get them in all different colors and sizes. Some of them are a little out of my budget. I think they would be good for a bigger family so everyone could have their own bottle. With just my daughter and I, this method works well for us.

COLD water vs. WARM water saves energy & money


Washing your clothes in cold water vs. warm water not only saves energy but also saves you money. 90% of the energy used for washing clothes is for heating the water.

If I have a tuff stain, like my daughters soccer uniform, I will soak it in a small bucket with arm & hammer baking soda for a few hours, then toss it in the wash. I have also heard that vinegar and peroxide is another great stain fighter. Haven't tried them yet. After my clothes are done washing I hang them on the line outside to dry. I love the smell of line dried clothes. If you don't have a line outside you can use clothes racks or hang them in the shower. On rainy days this works well too.

In the winter time I hang my clothes on racks and put them by my wood stove. They are usually dry with two hours. Hanging your clothes up takes a little bit of planning but in the long run it saves you money and saves your clothes. The dryers like to eat your clothing. Where do you think all that link comes from?

What you can do to help save energy:

-Set your temperature control to cold.
-Use cold water detergents. They leave your clothes as clean as warm water detergents.
-Wait until you have a full load or adjust the water level to a lower setting.
-Line dry your clothes.
-If you are looking at replacing your washing check out energy star.

Taking small steps like washing in cold water or line drying your clothes makes a huge impact on our environment. Thanks for all your help.

Using that Emergency Fund


The past couple of years have been scary seeing people loose their jobs, their homes, everything they have worked for. So I decided to get out of debt as fast as I can. I have been following Dave Ramsey's snow ball plan. The first step is to save $1,000.00 emergency fund. So I did and thank goodness I did.

My 93' Honda (252,000 miles) had to go into the shop for a timing belt, water pump, and head replaced. I struggled with even fixing it or not, but when I thought about the price of new cars and fixing mine, the decision was easy. Less than three months worth of a new car payments I have my Honda fixed and running great. I'm sure glad I had that emergency fund saved up.

Now it's back to square one to rebuild that emergency fund and still pay off the credit card debit. I know I can do it if I stay focused on my goal to be DEBIT FREE.

Bargain shopping at Thrift stores


Shopping at thrift stores, Goodwill and yard sales can save you a lot of money. The Goodwill is one of my favorite discount stores to shop at. It takes time to go through all their goodies but well worth it in the end. I have bought Lucky Brand and American Eagle jeans for $4.00. Sam and Libby shoes for $3.00. Goodwill also sells dishes, glass wear, desks, lamps, etc.


Yard Sales are another great source for buying items you need or want. Also church yard sales are usually really good. The members donate things for the sale to help raise money for the church. My grandmother recently found me a pair of Nike shox for $3.00 at a yard sale. They were only worn once and she didn't like them. Yard Sales can be a fun family affair. Check your local paper for yard sales in your area. Circle the ones that are close by. Get the kids up early and maybe give them a few dollars to shop with. They can learn to count the money, adding up the totals, and shopping frugal.


Thrift Stores are another great place to find bargains. Check out your local Salvation Army stores.

Chick-fil-A cow appreciation Day July 9th


Chick-fil-A is having their Cow appreciation day again Wednesday July 9th. Come in dressed head to toe like a cow and receive a FREE meal. Each year I don't have a chance to get to a Chick-fil-A to do this, but hopefully I'll be able to this year. I just printed out my cow ears, nose and spots. Ahhh, the things we'll do for a free meal.
